Macular Degeneration


Most people are aware of the dangers of long term exposure to UV light. UV light is known to promote the development of cataracts and other eye diseases. However recent studies suggest that UV is not the only harmful light spectrum. Many scientists and medical researchers now believe that high energy violet and blue sunlight may be linked to age-related macular degeneration (AMD).


AMD is a loss of central vision due to retinal damage. It is the leading cause of legal blindness in the United States. People who suffer from AMD may have difficulty reading driving or performing other normal activities. The leading eyecare organization, Prevent Blindness America notes that, "13 million people in the US age 40+ have signs of macular degeneration." One in three Americans will get AMD after age 75. Since there is no known cure for AMD it is important to look at measures that may slow the progression of the disease.



How You Can Prevent Macular Degeneration:

Swiss chard's greatest health benefit comes in the form of lutein and zeaxanthin - a matched pair of antioxidants found in high concentrations in the tissue of the macula. Because they absorb 40 to 90 percent of blue light intensity, these nutrients act like sunscreen for your eyes. Studies have shown that eating foods rich in lutein and zeaxanthin can increase the pigment density in the macula-and greater pigment density means better retina protection, and a lower risk of macula degeneration. One cup steamed Swiss chard provides only 35 calories.

For a few more calories, try this delicious recipe:
        -Over high heat, warm two tablespoons olive oil in a large, non-stick frying pan
        -Add two cloves garlic and cook one to two minutes, stirring constantly 
        -Add two pounds Swiss chard and sprinkle with salt
        -Cook four to five minutes until the Swiss chard is soft and reduces half in volume
